Saturday 28th February

Somms Exchange is a new tasting series built around conversation, bringing together the Club’s sommelier team and respected experts in the industry to exchange perspectives, bottles, and ways of thinking about wine.

For this inaugural edition, Junior Assistant Head Sommelier New Zhen Jie hosts an afternoon session with Yang of Convivial Champagne Bar, challenging the way we think about Champagne.

Champagnes That Excite

Living in Singapore, we’re fortunate to drink widely and well. Over time, this can shape what we expect from a wine: depth, weight, length, complexity, even value-for-money. All worthwhile things; but not the whole story.

This tasting takes a different approach.

Rather than asking how powerful or layered a Champagne is, we start with a simpler question: how does it make you feel?

The focus is on Champagnes with energy, lift, and brightness — wines that refresh rather than fatigue, that keep the palate alert and the conversation flowing. Champagne, perhaps more than any other style, has a way of sharpening the senses and bringing a sense of immediacy to the table.

Presented as a casual, guided exchange, this session is designed to feel open and unhurried. There’s space to taste, to compare, to ask questions, and to rethink what makes a bottle truly satisfying?

A Modern Santorini Story: Discovering Vassaltis Vineyards

In 2010, at the height of Greece’s financial crisis, Yannis Vassaltis left a career as an economist in London and returned to Santorini, drawn back by childhood memories of summers spent among the island’s vineyards. What began as the inheritance of a small family plot became a far more ambitious pursuit: to reveal Santorini’s true potential through wines of clarity, precision, and place.

Working with a small team of leading Greek oenologists, Yannis set out to reimagine what Santorini could be. On just four hectares of ancient volcanic soils, he built a boutique winery that pairs modern, minimalist design with deep respect for the island’s natural and architectural heritage. The first Vassaltis wines were released in 2015, quickly earning recognition for their purity and restraint.

Vassaltis is built on a simple principle: respect tradition, but work forward. Santorini’s ungrafted vines grow in volcanic soils of ash, pumice, and basalt, giving naturally high acidity and mineral tension. Winemaking here is precise and restrained, focused on clarity rather than intervention, allowing Assyrtiko and the island’s native varieties to show their character without excess.

This masterclass offers a guided tasting through the Vassaltis range, exploring how volcanic terroir, thoughtful viticulture, and contemporary vision come together in wines that are distinctly Santorini, yet unmistakably modern. It is a story of return, renewal, and the pursuit of purity—told through the glass.

Discover Mas Doix: The Soul of Priorat

We are thrilled to welcome the man behind one of Priorat’s most fascinating wineries to the Club to share the astonishing story behind the estate. 

Alongside his brother Ramon, Valentí Llagostera, co-founder of Mas Doix, has, over the last 25 years, transformed a series of old vineyards into something truly remarkable. Amazingly, the brothers were previously harvesting various plots of 110-year-old Carignan and Grenache vines to send to the local co-operative. Until, that is, they persuaded the vineyards’ owning family – whose ancestors had originally planted them, post-phylloxera, at a time when most growers were deserting the region – to finally make their own, single-site wines. 

It was a bold idea – conditions here are uncompromising, and yields astonishingly low. Some centenarian vines produce just 200 to 300 grams of fruit per vine – barely enough to make half a bottle. But it was worth it – the 1902 Centenary Carignan, of which just three barrels are made, was heralded by Spanish wine expert Sarah Jane Evans MW as ‘one of my top wines of all time’. 

In 2019, the property became one of only two Priorat wineries recognised for producing both grand cru and premier cru wines in the region’s new Burgundian-style ‘Gran Vinya Classificada’ hierarchy. This focus on single-vineyard bottlings captures the raw identity of Priorat’s most distinctive terroirs – and we are delighted to invite Members to join Valenti and discover it for themselves.

Grand Cru Masterclass with Burgundian Trailblazer Laurent Ponsot

We are thrilled to be joined by Laurent Ponsot, one of the region’s most progressive, outspoken and thought-provoking winemakers, for a deep dive into grand cru Burgundy. 

For years, Laurent Ponsot was the winemaking force behind Domaine Ponsot, the storied Morey-St-Denis domaine, where a startling 80% of production came from grand-cru vineyards. It was there that he launched his crusade against fake wines, which concluded with the conviction of notorious counterfeiter Rudy Kurniawan. In 2017, he further shocked the wine world by quitting his family domaine to start up his own negociant business, making wines from both his own vines and those of contracted growers. The result is a wider range spanning all levels of Burgundy – from generic and village wines right up to premier and grand cru, across a host of appellations. 

During what promises to be a fascinating evening, Laurent will focus on one particular wine from this line-up – the Griotte-Chambertin Grand Cru, Cuvée du Saule. This is one of the smallest Burgundy grands crus, at just 2.5 hecatres, and Laurent Ponsot is the largest producer, cultivating just over a hectare, as well as buying grapes from other growers. Even so, the wine is produced in very small quantities – though the palate itself is generous and full, lending itself to both early drinking and ageability – as we will see on the night, via six different vintages.

Sunday Cookout – A Raclette Affair

The spirit of “holidaying” lingers at the Club this Hari Raya public holiday weekend, and we invite Members to indulge in a cheese-filled evening, tucking into comforting raclette, perfectly paired with a guided whisky tasting.

Champagne Jacques Picard: Asia’s First Masterclass

Champagne Jacques Picard, based in Montagne de Reims, is a fourth-generation, family-run récoltant-manipulant (an independent grower-producer), celebrated for its Chardonnay-led, terroir-driven Champagnes and signature low-dosage elegance. The only grower-producer in the small village of Berru, east of Reims, this small, family-owned house makes highly individual wines through supremely hands-on, inventive winemaking.

We are delighted to host the first-ever Champagne Jacques Picard Masterclass in Asia, led by fourth-generation owner and associate winemaker, Théo Lievens. The grandson of Jacques Picard, Théo will be visiting Singapore for the very first time, and we are thrilled to welcome him to the Club for this special occasion.

The masterclass will feature a standout selection, including a vertical tasting of four back vintages of the house’s top cuvée, Art de Vigne – 2007, 2008, 2009, and 2010. The 2007 and 2008 vintages are long sold out, while the 2010 is the new release for 2026, making this a truly exceptional opportunity to explore the evolution of this hugely characterful house across time.

Emidio Pepe: Cult Wines of Abruzzo

Emidio Pepe is the archetypal family-run Italian estate, with roots dating back to 1899 and a cult reputation shaped by Emidio Pepe himself. A true pioneer of organic and biodynamic viticulture in the 1960s, Pepe was an advocate of such practices long before they became fashionable.

Set in the hills of Teramo, the estate farms just 15–17 hectares, producing some of Italy’s most age-worthy expressions of Montepulciano d’Abruzzo and Trebbiano from Abruzzo. Many vines are trained on the traditional pergola system, providing shade for a slow and even ripening, allowing the grapes to preserve their natural freshness.

In the cellar, the approach remains uncompromisingly orthodox: hand-harvesting, foot-crushing, spontaneous fermentation with native yeasts, and ageing in concrete tanks. The estate is also celebrated for releasing mature vintages, carefully hand-decanted and re-corked at the winery.

We are delighted to welcome Chiara Pepe, winemaker and fifth-generation owner, to showcase a selection of such wines, and to detail the estate’s minimal-intervention philosophy and unerring commitment to biodynamic and regenerative farming.
