Over time, this can shape what we expect from a wine: depth, weight, length, complexity, even value-for-money. What began as the inheritance of a small family plot became a far more ambitious pursuit: to reveal Santorini\u2019s true potential through wines of clarity, precision, and place.<\/p>\n\n\n\n<p>Working with a small team of leading Greek oenologists, Yannis set out to reimagine what Santorini could be. On just four hectares of ancient volcanic soils, he built a boutique winery that pairs modern, minimalist design with deep respect for the island\u2019s natural and architectural heritage. The first Vassaltis wines were released in 2015, quickly earning recognition for their purity and restraint.<\/p>\n\n\n\n<p>Vassaltis is built on a simple principle: respect tradition, but work forward. Santorini\u2019s ungrafted vines grow in volcanic soils of ash, pumice, and basalt, giving naturally high acidity and mineral tension. Winemaking here is precise and restrained, focused on clarity rather than intervention, allowing Assyrtiko and the island\u2019s native varieties to show their character without excess.<\/p>\n\n\n\n<p>This masterclass offers a guided tasting through the Vassaltis range, exploring how volcanic terroir, thoughtful viticulture, and contemporary vision come together in wines that are distinctly Santorini, yet unmistakably modern. Amazingly, the brothers were previously harvesting various plots of 110-year-old Carignan and Grenache vines to send to the local co-operative. Until, that is, they persuaded the vineyards\u2019 owning family \u2013 whose ancestors had originally planted them, post-phylloxera, at a time when most growers were deserting the region \u2013 to finally make their own, single-site wines.&nbsp;<\/p>\n\n\n\n<p>It was a bold idea \u2013 conditions here are uncompromising, and yields astonishingly low. Some centenarian vines produce just 200 to 300 grams of fruit per vine \u2013 barely enough to make half a bottle. But it was worth it \u2013 the 1902 Centenary Carignan, of which just three barrels are made, was heralded by Spanish wine expert Sarah Jane Evans MW as \u2018one of my top wines of all time\u2019.&nbsp;<\/p>\n\n\n\n<p>In 2019, the property became one of only two Priorat wineries recognised for producing&nbsp;<strong>both grand cru and premier cru wines<\/strong>&nbsp;in the region\u2019s new Burgundian-style \u2018Gran Vinya Classificada\u2019 hierarchy. It was there that he launched his crusade against fake wines, which concluded with the conviction of notorious counterfeiter Rudy Kurniawan. In 2017, he further shocked the wine world by quitting his family domaine to start up his own negociant business, making wines from both his own vines and those of contracted growers. The result is a wider range spanning all levels of Burgundy\u202f\u2013 from generic and village wines right up to premier and grand cru, across a host of appellations.&nbsp;<\/p>\n\n\n\n<p>During what promises to be a fascinating evening, Laurent will focus on one particular wine from this line-up \u2013 the Griotte-Chambertin Grand Cru, Cuv\u00e9e du Saule. This is one of the smallest Burgundy grands crus, at just 2.5 hecatres, and Laurent Ponsot is the largest producer, cultivating just over a hectare, as well as buying grapes from other growers. A true pioneer of organic and biodynamic viticulture in the 1960s, Pepe was an advocate of such practices long before they became fashionable.<\/p>\n\n\n\n<p>Set in the hills of Teramo, the estate farms just 15\u201317 hectares, producing some of Italy\u2019s most age-worthy expressions of Montepulciano d\u2019Abruzzo and Trebbiano from Abruzzo. Many vines are trained on the traditional pergola system, providing shade for a slow and even ripening, allowing the grapes to preserve their natural freshness.<\/p>\n\n\n\n<p>In the cellar, the approach remains uncompromisingly orthodox: hand-harvesting, foot-crushing, spontaneous fermentation with native yeasts, and ageing in concrete tanks.
